POKOTABI / Motsunabe Hidetora
京もつ鍋 秀寅 (キョウモツナベヒデトラ)
The signature dish at Motsunabe Hidetora is Kyo motsunabe “Shiro”, made with Kyoto dashi, white miso and Omi beef offal. Explore how its flavours compare with the spicy “Aka” and soy-sauce versions, choose noodles or rice porridge to finish, and browse the small plates served alongside the hot pot.
01 / ABOUT THE PLACE
The signature “Shiro” at Kyo Motsunabe Hidetora combines Kyoto dashi and specially prepared white miso with Omi beef offal from Shiga Prefecture. Diners who chose it have praised the balance of offal and vegetables, as well as the soup’s light yet layered flavour. One visitor noted that the richness of the offal felt less heavy than it looked, and that eating it with vegetables and broth made a particularly memorable combination. It is a dish to savour as you gather around the pot.
For a different flavour, “Aka” adds house-made spicy miso to white miso, bringing a savoury heat to its mellow base. “Golden Soy Sauce” combines kelp and bonito dashi with house-made soy sauce, offering an alternative to the white-miso broth. Seasonal specialities listed include a sansho pepper hot pot in spring and a version with oysters in winter.
There is also the pleasure of choosing how to finish the meal: with Kyoto stone-milled noodles or rice porridge. The menu describes the noodles as chewy, good at holding the broth and slow to soften; egg porridge and cheese risotto are also available. One visitor recalled that, after seeing how much had been ordered, a staff member suggested there might be room for both noodles and porridge. They tried both.
The menu also offers small plates for before or after the hot pot, including seafood jeon, fried Omi beef offal and almond tofu. One diner described the seafood jeon in detail: its thin, slightly chewy batter and a house-made dipping sauce that starts sweet and finishes with a kick. They also enjoyed being able to cut it into pieces and vary how they ate it. Another visitor found the fried offal richly flavoured, with the crispness of the coating followed by fatty richness and the springy texture of the skin. You can keep the hot pot centre stage with a lighter side, or add a more substantial dish.
For a meal with a group, set menus with all-you-can-drink are available for parties of 2 or more. They can include smoked mackerel, horse sashimi and a choice of finishing dish to follow the signature “Shiro”.
